Known the world over as Spain's most famous dish, Paella, like so many other wonderful recipes worldwide, started as peasant food. Over the centuries, it has evolved into the king of Spanish cuisine.
Today, the basic ingredients of any paella are rice, saffron, and olive oil. From this base, the possibilities are endless. Azafron offers anything from the truly traditional—rabbit, chicken, chorizo, shellfish, and vegetables—to a vegetarian version that lacks none of the flavor and beauty of its meaty brethren.

• Marinated hard cheeses from Spain - aged Manchego, Iberico, Mahón marinated in tarragon olive oil and a little dry sherry. Suggested sherry: La Gitana Manzanilla.
• Roasted Marcona almonds with rosemary and grey salt. Suggest sherry: Lustau "Papirusa" Manzanilla.
• Various cured meats and sausages (Jamon Serrano, Chorizo Blibao, Lomo) with marinated olives. Suggested sherry: Napoleon Amontillado.
• Tortilla Española—A staple in Spanish pubs, this delicious spanish omelet is made from thinly sliced potatoes, onions, and eggs, and can also include chorizo. Suggested sherry: Hidalgo Oloroso Especial.
